Veggie Month – March into a meat free zone!

March 2009 has been named as veggie month – encouraging people to go meat free for reasons including health, the environment and animal suffering.
So what does this mean for us? Well, depending on your own personal preference you may already live a meat free life, however for those new to vegetarian ways here are some top tips to help you get started!

Which foods can you eat?

Everything which doesn’t contain meat – eat soups, pizza, pies and roast dinners – just opt for a meat free version or alternatively try Quorn – a healthily meat free alternative which allows you to create some delicious dishes! Don’t feel like you have no variety if you are a vegetarian you can eat normal meals which are delicious, you have to learn to find alternatives to meat dishes. Luckily restaurants always have great options available for vegetarians.

Protecting the Planet

Animal farming uses more land and energy than plant agriculture – 900 litres of water are used to make 1kg of wheat, 100,000 litres of water produce 1kg of beef. Turning veggie could save thousands of litres of water which is great for the environment.

Meat Free Recipe

For those who want to eat meat dishes without the meat use Quorn as a substitute. Try preparing this delicious Quorn chilli in your oven.

Serves 4, Ready in 25 minutes

Ingredients
• 2 tablespoons olive oil
• 1 red and 1 yellow pepper deseeded and chopped
• 3 garlic cloves, chopped
• 2 teaspoons cumin seeds, lightly crushed
• A 300g pack frozen Quorn mince
• 350g jar tomato and chilli pasta sauce
• 410g can kidney beans

Method:

1. Heat 2 tablespoons olive oil in a large, non-stick frying pan over a high heat. Add the red and yellow peppers and cook for 5 minutes, stirring, until softened and charred. Reduce the heat slightly and add the 3 garlic cloves, 2 teaspoons cumin seeds and 300g pack frozen Quorn mince. Fry for 3 minutes, then pour in a 350g jar tomato and chilli pasta sauce.

2. Add 150ml water to the jar, rinse out into the pan and stir in 410g can kidney beans in water, drained. Bring to the boil and then simmer for 10-15 minutes or until thick and rich. Stir in a good handful of chopped fresh coriander and season to taste. Divide between plates and serve with cooked rice. Top with a dollop each of soured cream and fresh, ready-made guacamole, if you like.
