I’ve just come across this article by the Guardian’s Matthew Fort about his new induction range cooker and think it gets right to the heart of the electric vs gas vs induction debate.
For those of you not familiar the big question has always been “which is better electric or gas?” Gas hobs have always been better than electric ones but fan assisted electric ovens give a better, more even baking experience than their gas counterparts.
The most common compromise has been to have either a dual fuel cooker or separate oven and hob but this means that if you don’t have gas at home you get a raw deal.
Now that induction hobs are becoming more affordable there is a third option. Induction hobs run off electricity but give results which are actually better than gas.
The article is well worth a read but after comparing prices I would personally choose a different brand of cooker. The one that Matthew Fort has bought is a great machine but with a price tag of around £4000 it’s a significant investment. I’d probably opt for something like this Stoves 90E which has both ceramic and induction hobs and works out significantly cheaper.
